Banh xeo, Vietnamese pancakes are irresistible: prawn, pork, onion, sprouts, mushroom wrapped in light crispy shell. These shells are lightly burnt which you won't find in restaurants, but I simply adore them like this. That's one of the benefits of having your mum cook for you.. I can ask for exactly what I want.
These pancakes are broken, wrapped with lettuce and other mints then dip in chilli fish sauce... delicious!
